Simple High-Fibre Indian-Inspired Curry

A warming dish to enjoy through the winter months

My go-to meal recently has been this simple curry, inspired by Indian flavours with a high-fibre secret ingredient.

The base of this curry is easy:

  • 1 yellow onion
  • 2–3 cloves of garlic
  • 1/2 inch of grated ginger (optional)

You can also add in bell peppers, carrots, or celery.

Once the onion is softened, add in the spices:

  • 1–2 tbs curry powder
  • 1–2 tsp turmeric
  • Black pepper
  • Option to add a sprinkle of salt or a vegetable or chicken bouillon cube (highly recommend a bouillon cube)
  • Option to add garam masala here (1–2 tsp) or to wait until the end

You can also add in cayenne pepper to taste (~1/4 tsp).

Now for the fibre add in:

  • 1 can or 1–2 cups chickpeas
  • 1 cup red lentils
  • Option to add in 2–3 medium yellow potatoes or 1 large sweet potato

I add in enough water to cover all the ingredients and ensure nothing is stuck to the bottom of the pot once I add the water.
